Skip the meat on Earth Day (without feeling hungry)

Going vegetarian one day each week was one of my goals this year. I have been able to stick to this goal and sometimes even exceed it by having more veggie days. An integral part of being able to go vegetarian for a meal-lover like me was finding veggie recipes that satisfy these 4 requirements:

  1. Delicious
  2. Filling
  3. Healthy
  4. Quick

Go veggie to help reduce carbon footprint and protect our environment. Animal farming alone causes 14.5% of all greenhouse climate pollution. That’s more than every single car, train, and plane on the planet combined!

Skipping the meat also benefits your health as it helps to reduce the risk of heart disease and some cancers, keep your cholesterol low and reduce exposure to antibiotics.
